Frozen Assets

CG13B2 Are you finding yourself with way too much on your to-do list – and not nearly enough time to actually do it?

Many people are stretched for time and the last thing they feel like hearing at the end of a long day is, “What’s for supper?”

With just a little planning, a couple of hours and a small amount of freezer space, the family cook can answer this question with a smile.

Use these simple recipes to set aside some frozen assets and reap the rewards in the busy days to come.


This quick and easy recipe from my book, The Occassional Cook, will yield dinner tonight – and two different meals to sock away in the freezer.

First, prepare a simple meat mixture:

  • 4 lbs. lean hamburger (or other ground meat)
  • 2 medium onions, chopped
  • 2 T minced garlic

Brown the meat with the other ingredients. Drain fat. Cool.

Now, here’s the fun part…. Prepare a family-pleasing Upside Down Pizza for tonight – and stash the other two meals in the freezer.


  • 3-4 cups meat mixture
  • 2-3 cups jar spaghetti sauce, w/o meat
  • 2 cups mozzarella cheese
  • 1 can refrigerated crescent rolls

Stir together the meat and the sauce. Spread in a 9×13 baking pan. Sprinkle cheese over the meat mixture. Unroll crescent rolls and lay over the top. Sprinkle with parmesan cheese, if desired. Bake at 375° 20-25 minutes until sauce is bubbling around the edges and pastry is golden brown.

While your pizza is baking, use the rest of the meat to whip up these two meals for later….


  • 3-4 cups meat mixture
  • 3 / 4 cup catsup
  • 3 T mustard
  • 1 T Worcestershire sauce
  • 2 T brown sugar
  • 4-6 hamburger rolls

Place all of the ingredients, except the rolls, into a one gallon freezer bag. Put rolls in another one gallon freezer bag. Place both bags in a two gallon freezer bag to make a meal kit. Freeze.

To serve: After thawing, simmer meat mixture 10 minutes. Serve on rolls.


  • 2-3 cups meat mixture
  • 1 16-oz can diced tomatoes
  • 16-oz can diced tomatoes w/ green chillis
  • 1 package taco seasoning
  • 1 16-oz can kidney beans (drained and rinsed)
  • 1 16-oz can corn with liquid
  • 16-oz. can beef broth
  • 1 tablespoon sugar
  • 3-4 cups tortilla chips
  • 2 cups cheddar cheese

Place all ingredients, except chips and cheese, in a one gallon freezer bag. Place chips and cheese in separate freezer bags. Place all bags in a two gallon freezer bag. Freeze.

To serve: After thawing, simmer soup for 30 minutes. Ladle soup into bowls and top with chips and cheese. If desired serve with sour cream and salsa.
